Pad see ew (chow fun in Cantonese) is popular, a plain fried egg for breakfast, and there are many other meals that contain fried eggs.

Maybe half-a-dozen or so come with the runny fried egg as standard but adding it as an option on top of a whole lot of Thai dishes that come with rice easily doubles that.
Never thought of adding an egg on top of noodles though. Maybe I haven't lived.
BTW, I am experimenting with making my own Bibimbap which is a Korean 'smorgasbord in a bowl' that comes topped (naturally) with a runny fried egg.

Look great Tam, worth posting a more detailed recipe. I think we should open a new thread for recipes, we have one for jokes, food is as important as humour
