I think Udon Rajabhat university do a full course learning Thai 5 days a week and then you can get a education visa. If you go there to the international center you can double check with them.

I don’t have the exact names of schools, but when I was looking for something similar, I found expat Facebook groups and local forums super helpful. They usually have the latest info on which schools offer ED visas in Udon.
