GENTLEMEN
12 tomatoes
2 - 3 onions
1 can whole tomatoes
1 small can tomato paste
1 tbsp. chili powder (the type for making chili con carne)
12 cloves garlic finely chopped
2 bunches cilantro (pak chee) chopped
6 tbsp. vinegar
6 tbsp. fresh lime juice
1 green capsicum (bell pepper)
18 - 20 Thai bird chilies
Or split the salsa into 2 containers and halve the bird chilies and add 6 Jalapenos to the second batch.
LADIES
8 - 10 good sized tomatoes (the size of your fist, not Romas. The smaller the tomato, the larger the number.)
1.5 good sized (preferably thick-walled) green pepper (caspicum)
1 large yellow onion
4 - 6 cloves of garlic
1 lemon (or two Thai limes)
1 tsp Worcestershire Sauce
1 1/2 level teaspoons of ground cumin
1 level tablespoon of salt
Small bunch of cilantro
2 good sized fresh jalapenos
Cut the tomatoes, using a serrated knife into small chunks
Dice the onion
Chop the garlic finely, or use a garlic press
Seed and chop the green peppers...now mix all of them well together.
Add salt, cumin, finely chopped cilantro...mix well again, gently, don't tear and mash the tomatoes.
Seed the jalapenos, removing the seed walls, as well...then chop finely and mix through the salsa.
Finely sprinkle your Worcestershire sauce and the juice of your lemon, mix one more time.
Keep in a glass or ceramic bowl, in the fridge for at least two hours. Overnight is better as the flavor of the jalapenos moves through the salsa.
To do this with Thai chili...do everything exactly the same but use only two or three medium sized green Thai chilis.

Yes HM. Ladies version is the lite version!
Ladies goes great with fish and chicken.
And Gentlemen goes great with red meats and corn chips.
I'll post more of my family Tex Mex recipes as I come around to making them.
It's all down to ingredients and the quality of them.

In our house the little lady eats the hottest of the of hot, the spiciest of spice. I cannot come anywhere close to eating hot/spicy food like she can eat. I love salsa. Make it often at home. The wife will add more chili to hers while I am enjoying a pretty darn spicy salsa she needs more heat.
This past summer we at a place in the states called Buffalo Wild Wings. The wife ordered the "nuclear" version. They were the hottest they had to offer and she actually enjoyed them. I ordered a milder version but tried hers. I doubt that I could have eaten half of one of those wings. It was pure habanero!
The salsa recipies sound great but in this part of Thailand (Isaan) switching the Gentlemen/Ladies headings would quite possibly be more appropriate from heat stand point. I agree about fish. chicken/red meat usage.

Born and raised in the Missouri Ozarks. Keep a home on Truman Lake, Missouri. Worked for an engineering firm with home office in Chicago. Lived all around the US as resident engineer on large construction projects.

Don't fish a much as I used to. Only about once a week now that I've settled in Udon. International fishing was my hobby and passion for about 25 years. Was single at the time and didn't have to ask permission. Lots of fishing trips all around the world. If fact, if not for fishing I wouldn't be in Udon now. My first trip to Thailand was for fishing.
