Not meaning to drift off topic but there is a restaurant in Udon providing fresh seafood. It is called the Lemon Glass (yes it's spelled that way) and they have tanks of live seafood that you can pick out for your dinner. Lobsters, prawns/shrimp, crabs and various fish available. All alive and swimming. A bit pricey as one might expect but our meals there have been outstanding and most enjoyable. Both indoor (air conditioned) and outdoor seating.
Don't know the exact address but not too far from the airport.

I just see in your last comment a statement that alludes that in your OP you had an idea of a product, but as yet none of us have come close to mentioning it, or wanting it..is that how I read it..you were sort of fishing for comments without actually asking if you cooked pizza, seafood, grilled steak , barmee etc, would we come.
I no you are trying to protect your idea /product, but I cant really give you an informed opinion on whether I would visit your establishment, when you are not going to let on what it is you are actually going to sell, or if it would be a successful business..indeed, if none of us have come within coowee of your product/idea as you say, then me thinks your venture may not go down to well..so far us, the potential customers, have asked for grilled steak, seafood, mex, mixed thai/farang, and we can get chinese, thai, lao, so that doesnt leave much excpet Indian, pasta, fish and chips, pizza, and all those hoyty toyty swish dishes...
see you have me floundering around in the dark, trying to give you good comment, when I dont either know what it is you want to sell....no offence. I like to help out with ideas, but it is hard when one side is holding back some cards..

Macca you are right. I have been holding back some cards mate, but only to protect my plans. There is definatly a market for the food I will be selling... I am now ironing out the small print to see if I can make the margins work for all parties involved.
As I have already said, the menu WILL not be as diverse as other menus in town but you can bet your left nut the food will be worth your visit.

The vast majority of Thais in Udon dont eat western food, I wouldnt be relying on the Udon expat population to maintain a business venture in food, I guess it depends if your aim is to make a little money and have an enjoyable hoby or to have a serious business making money to enable retirement?

the only things I have yearned for is a decent juicy steak, mashed spuds, sheppard pie, a decent pizza with a proper fluffy pasty base, apple truddle, and a cuppa...sell one of those matey, and I will swooped in when your up and running..
like I said , if you can source a beef, or pig farmer, and kill a beast in good fashion so the meat is not tainted, then perhaps Piemash can butcher it for you. I cannot stress enough the importance of a quick clean kill, with no stress to the animal, in order to give your meat the best taste and quality..anyway enough rambling from me..good luck digger.

Option for a/c and non a/c for eating a good establishment idea alongwith plenty of staff and less greedy on the margins on dinks (soft and alcoholic).Best establishment idea,do not do an opening party with balloons,plenty of chasing cheap charlies in Udon who will never frequent your place ever again.LOL

I think you need to drive around Udon at night and look at the existing eateries. Udon is not for innovative eateries or even places that deviate from the normal fare. It appears most Thais want the quickest and cheapest food, hence the proliferation of food carts and sidewalk restaurants. The few upper income Thais will support the few Bangkok chain restaurants that have opened in UD Town.
What a few westerners will eat on occasion would not be sufficient to support an ongoing establishment. Just like the bar business the restaurant business is over-saturated with cheap places. When Central re-opens there will be the return of many chain restaurants that had to close during the remodeling. You are going to need deep pockets and luck in order to survive.
Remember - location, location, location and parking.
