Believe a rasher means one thin slice of bacon. However, by calling for a rasher rather than a slice of bacon it implies that the bacon is the leaner British cut, not the American cut that comes from the pork belly. I suspect that the rasher may be sometimes referred to as back bacon or streaky bacon to differentiate it from American-style (pork belly) bacon.
