I have 1 block just over a kilo but 518 THB for the block hopefully soon the mature cheddar will come down in cost again to around 380 pkg but have no actual delivery date yet

Your question is valuable. Though we try to buy cheese at a good rate and we'll pass this on to our customers. Sometimes we can only just buy a small batch for a nice price. That small batch might be sold within days, a week.
The next batch might cost us more, subsequently our prices are going up too. We have already an experience that we published a price and a customer came in the shop and demand the price we published two weeks prior to him wanting to buy a wedge of cheese. We don't like such confrontations either. I hope you understand. If you require a full price list of our products, no problem, please pm us with your e-mail address and we'll send it to you. remark: Prices might change, without prior notice.
