I worked all over mainland China between 1980 and 1988 and apart from the China Garden restaurant run by an Aussie-Chinese guy that opened in the basement arcade of the Great Wall Hotel around 1985, the whole concept of exotic, wholesome and tasty Chinese cuisine in China is a myth.
However, I did stay for 3 weeks in 1992, under entirely different economic circumstances, and the food then, from memory, was less than memorable. As was the staff canteen food during my later stay, when I ventured into the basement at lunch time.
The myth is that the Chinese (in China) introduced pineapple to sweet & sour anything.
