^ Note to fellow Jockinese on UM, I have bought ALL the oatcakes that Marks & Spencer had on close down clearance at Central.

I made some bloody excellent crock pot stovies a few months back but held off making more after running out of oatcakes. But with my recent haul and along with Howie's beetroot, it's game on again.

My favorite is tattie scones with fried egg. Lorne sausage looks good. Oh forgot ,grandads name was McKie. Gran used to make a bacon buttie and always used the bread fried in bacon grease ,sloppy mess of bacon bread,butter and grease.awesome and probably illegal now

Scotch pies : Pastry good but could be a bit thinner.
Filling: more like burger. Maybe a courser mince and some gravy,lard or stock.

The second batch I added onion and extra stock ,the problem is the mince comes ready ground very fine giving it the burger effect. Two ways around that problem ,one I could pre cook the mince but that would possibly make the lamb dry or two I could add a filler that would soften the texture. Work in progress as they say. not being an expert on the Scotch pies finer points i reckon both batches were are dam good maybe the second shaded it but hard to say why , lamb is a treat in any guise to me .. i take mine with minted peas, just gravy or baked beans with a splosh of HP or Worcester sauce. Also good to eat warmed and on the hoof as the solid pastry doesnt break up and the contents spew out .. a good addition to PFs range imo.

Lard is not easy to work with , come the hot season its likely to be impossible . so anyway just got another kg of lamb out and going for the third recipe ,pastry seems to be 95% so the filling needs to be perfected . ^ My recollections of Scottish pies when I was a lad, the meat was less congealed than a pork pie (or a lamb burger) and more like a mince (meat) pie but not overly saturated with gravy or stock. I think maybe pre-cooking or simply browning the ground lamb first as you suggested and then 'moisturizing' after the fact will do the trick.

Might upset the jocks but I'm going for a BBC recipe, the thing with scotch pies is you can't lose any of the grease. To add insult we made scotch eggs , bloody English.
